The traditional Gujarati dessert, Basundi, is thick and sweetened milk that can be relished as is or poured over other desserts. To make this Holi-special dessert, follow these five easy steps.
1 litre milk 1/2 cup sugar 4-5 strands saffron 4-5 green cardamom pods A pinch of nutmeg 2 tablespoons almonds 2 tablespoons pistachios 2 tablespoons cashew nuts
Boil the milk and then let it simmer till it is reduced to half the volume.
Add crushed cardamom, saffron, and nutmeg. Stir well to combine the flavours.
Once the milk has thickened, add sugar and stir till it dissolves.
In another pan, lightly roast all the nuts after chopping.
Garnish the basundi with roasted nuts, and your dessert will be ready.
