If you're planning to make a batch of homemade mithai for Holi, skip the laddoo, and make the crispy and syrupy malpua, which is a hit with every age. You can add generous doses of dry fruits to make the recipe more indulgent. Here's an easy recipe for malpua you can try at home.

Ingredients

– 1 cup all-purpose flour  – 1/2 cup semolina (sooji) – 1/2 cup sugar – 1 cup milk – 1/4 teaspoon cardamom  – 1/4 cup chopped mixed dry fruits (such as almonds, cashews, pistachios, and raisins) – Ghee or oil for frying – Saffron strands ) – Chopped nuts for garnish

Step 1

In a mixing bowl, combine the all-purpose flour, semolina, sugar, cardamom powder, and chopped mixed dry fruits. Add milk and mix until you get a batter.

Step 2

While the batter is resting, prepare the sugar syrup. In a saucepan, combine sugar, water, and cardamom powder. Bring to a boil and simmer until the sugar dissolves completely. Remove from heat and set aside.

Step 3

Heat ghee or oil in a shallow frying pan over medium heat. Once the batter has rested, give it a quick stir. If it has thickened, you can add a little more milk to adjust the consistency.

Step 4

Take a ladleful of batter and pour it into the hot ghee or oil to form small pancakes. Fry until the bottom side is golden brown, then flip and cook the other side until golden brown as well.

Step 5

Transfer the fried malpuas to the prepared sugar syrup. Let them soak for a few seconds, then remove. Garnish the malpuas with saffron strands and chopped nuts and serve.
