Holi is a festive time during which sweets and desserts abound. However, excessive sugar consumption may not be good for your health. Therefore, here’s a healthy, sugar-free coconut laddoo recipe to indulge in this Holi. This recipe substitutes sugar with jaggery.
4 cups grated coconut 2 cups of jaggery ½ cup chopped almond ½ cup chopped cashew ½ cup chopped walnut 4 tablespoons of ghee 2 tablespoons of pumpkin seeds 2 tablespoons of sunflower seeds 2 tablespoons of raisins 1 tablespoon of poppy seeds ½ teaspoon cardamom powder
Heat ghee in a pan and add almonds, cashews, walnuts, sunflower seeds, pumpkin seeds, and raisins. Roast the mixture till the nuts become crunchy; set aside for cooling.
In a separate utensil, heat additional ghee and add coconut. Roast the mixture on a low flame till the coconut begins emitting a fragrance.
Introduce jaggery into the ghee-coconut mixture and blend thoroughly. Keep cooking till the jaggery melts and the mixture starts becoming firm.
Add the roasted nuts, plus poppy seeds and cardamom powder, to the mixture. Combine the ingredients thoroughly and set aside for cooling.
While still warm, start shaping the mixture into bite-sized laddoos. Savour or serve your homemade coconut laddoos as needed.
