Himachali Siddu is a delightful and oil-free steamed dish hailing from the picturesque mountains of Himachal Pradesh. This traditional treat encapsulates the essence of the region's culinary heritage with its wholesome and healthy preparation method.

To make the dough 2 cups whole wheat flour or super fine variety of flour 1 cup lukewarm water ½ tsp sugar ¾ tsp active dry yeast

1 cup white urad dal Water, as required ½ cup onions, finely chopped 3-4 green chillies, chopped 1 tbsp ginger, finely chopped ½ tsp hing 1 tsp turmeric powder 2 tsp red chilli powder Salt, to taste 2 tbsp Coriander leaves, finely chopped Ghee, to serve Green chutney, to serve

To a bowl, pour some water. Put the sugar and yeast in a bowl and let them sit for 15 minutes. To the whole wheat flour, add the yeast mixture, and knead until a soft dough forms.

Cover the dough and let it rest for 2 hours after applying oil to the top. The dough needs 2 hours to rise to its full size.

To make the stuffing, grind the soaked urad dal roughly without any water. Once it's done, put it in a bowl with the rest of the filling ingredients. Mix everything well, and then steam it for 5 minutes.

When it's cool enough, use your hands to break it up. Add the filling to the dough and pinch the sides together. It can also be made round. Steam them for 8 to 10 minutes and serve with melted ghee and salsa.
