High-Protein Lentil Salad Is The Best Vegan Post-Workout Dish

Try this hearty salad made with lentils, fresh, seasonal vegetables, and a homemade dressing, perfect for fueling your day with plant-based protein. 

Ingredients

½ cup masoor dal (lentil) ½ cup cucumber ½ cup carrot ½ cup tomato ¼ cup radish ¼ cup onion ¼ cup capsicum ¼ cup pomegranate seeds ¼ cup coriander leaves or parsley 

For the dressing

2 tbsp extra virgin olive oil 2 tbsp honey or maple syrup 2 tbsp lemon juice ½ tsp salt ¼ tsp black pepper 1 garlic clove, minced

Wash and soak lentil for at least half an hour for better digestion. Cook on medium heat for 10-15 minutes or until soft but not mushy. Drain all the water and let it cool.  

Step 2

Meanwhile in a bowl whisk all the dressing ingredients and keep aside. In a large bowl add cooked lentils and all the chopped veggies. Pour the dressing, toss well and enjoy!
