The core of all the flavours is the spice mix. It can be tailored to your tastes, but freshly ground always tastes better than powdered.
Even if you like your tea milky, know when to stop. We promise you'll have a better flavour if you don't overdo the milk.
For sweetness, switch the sugar for jaggery and taste how this natural and rich sweetner brings a new dimension to your tea.
2 cups water 2 teaspoon loose leaf black tea 2 cardamom pods 1 clove 1 inch knob of ginger, chopped into slices teaspoon black peppercorn, freshly cracked ½ cinnamon stick 1 cup whole milk 2 teaspoon jaggery, or to taste
In a grinder, crush the whole spices to a powder and add to a pot of boiling water along with the tea leaves.
Bring the pot to a boil, then reduce the heat and let it simmer. When the spices are fragrant, add the milk.
Strain the chai with a sieve into glasses, mugs, or a tea pot. Mix in the jaggery and serve hot.
