If you’re planning to kickstart your day with a nutritious and tasty breakfast, that gets ready in no time, nothing can be better than Egg dosa. This South Indian delicacy is a twist to the traditional dosa recipe which is made with the goodness of eggs. It is a perfect breakfast recipe, but you can make it for a light dinner as well. Take a look at the recipe:
1 cup dosa batter 2 eggs 1 finely chopped onion 1 finely chopped green chili 1 tablespoon chopped coriander leaves Salt to taste Oil or ghee for cooking
To make the dosa batter, add rice, urad dal in 2:1 ratio and water and blend it until smooth. Ferment the batter overnight.
Heat a dosa tawa on medium flame. Once hot, pour a ladleful of dosa batter onto the pan and spread it in a circular motion to form a thin layer.
Crack open an egg onto the dosa and quickly spread it evenly using a spoon.
Sprinkle chopped onions, green chillies, and coriander leaves over the egg-dosa mixture.
Drizzle a teaspoon of oil or ghee around the edges of the dosa and let it cook for 2-3 minutes until the edges turn golden brown and crispy.

Carefully flip the dosa and cook for another minute until the egg is cooked through.
Serve egg dosa with your favourite chutney or sauce
