Winter evenings call for some soul warming food. What could be better than a cup of thick, creamy restaurant-style soup made with winter-special sweet potatoes? Try this walnut-infused soup to please the palate and soul with its delightful taste.

3 medium-sized sweet potatoes 1 cup walnut ½ inch ginger 2 garlic cloves 1/2 inch cinnamon stick ¼ cup coriander leaves ½ cup heavy cream 3 - 4 tbsp of butter 1 tbsp oregano 1 tbsp red chilli flakes Salt and pepper, as per taste 2 cups vegetable stock

Wash the sweet potatoes, other veggies, and herbs thoroughly.

Chop garlic, ginger, and coriander leaves. Cut the sweet potatoes in equal halves and keep aside.

Take a pressure cooker and fill it with sweet potatoes, cinnamon stick, ginger, garlic cloves, and salt. Cook for two whistles, turn off the flame and let it cool.

Heat a pan and add butter in it. Put the walnuts in the pan and saute for a while. Remove the walnuts and place in a blender.

Add the sweet potatoes stock into the blender with the walnut, make a smooth blend and keep it aside.

Pour the sweet potato and walnut blend back into a pot and let it come to a gentle simmer.

Add the heavy cream, adjust the salt and add the oregano, chilli flakes and pepper. Allow the soup to turn thick.
