A spiced mutton soup of Middle Eastern and Mughlai origin, mutton shorba is just the dish to warm your heart, soul and bones this winter. Here is an easy-peasy recipe you can try out.

500g mutton, with bones 2 onions, sliced 1 tomato, chopped 1 tbsp ginger-garlic paste 1 cinnamon stick 2 green cardamoms 3 cloves 2 green chillies, slit ½ tsp turmeric powder 1 tsp cumin powder 1 tsp coriander powder 2 tbsp ghee Salt, to taste Water, as required Coriander leaves, to garnish

Heat ghee in a cooker, then add cinnamon, cardamom, cloves and green chillies.

Once these stop spluttering, add onions, ginger garlic paste and saute for 10 minutes.

Now add the tomatoes and powdered spices and cook for another 5 minutes.

Add the mutton, adjust the salt and saute for 2-3 minutes, then add water. Cook for 3-4 whistles.

Once the mutton shorba is ready, serve it while hot with coriander leaves on top.
