Healthy Suji Rusk Recipe To Pair With Your Tea And Coffee

Rusk or toast, as it is called in India, is popularly paired with tea or coffee in the country. The flavours and texture of the baked goods complement the hot beverages well and are a favourite for many. But you can make this affair healthier by adding these suji rusks to your teatime instead of your traditional rusk. Here's a recipe for you to try:

Ingredients

1 cup semolina (suji) 1 cup all-purpose flour (maida) 1 cup powdered sugar 1/2 cup butter (room temperature) 1 teaspoon baking powder 1/2 teaspoon cardamom powder 1/4 cup milk (as needed) Sliced almonds or pistachios for garnishing (optional)

Step 1

Preheat the oven to 350°F (180°C) and line a baking tray with parchment paper.

Step 2

Mix semolina, flour, powdered sugar, baking powder, and cardamom powder.

Step 3

Add butter, and rub into a dry mix to form a breadcrumb texture.

Step 4

Gradually add milk and knead into a smooth dough. Shape the dough into logs and place them on a baking tray.

Step 5

Bake for 25–30 minutes until golden brown. Cool, slice into rusks, and place them back on the tray.

Step 6

Bake again at 300°F (150°C) for 15-20 minutes until crisp. Cool completely and store in an airtight container.
