Upma is a staple Indian breakfast meal that is prepared using a wide range of veggies. Replace the semolina with oats and make the dish even more wholesome. Oats are rich in fibre and therefore, may help in weight loss if consumed mindfully.
1 cup rolled oats 1 onion 1 tomato 1 green chilli 1/2 inch ginger 1/4 cup mixed vegetables 1 tablespoon oil or ghee 1/2 teaspoon mustard seeds 1/2 teaspoon cumin seeds A pinch of asafoetida (hing) 1/4 teaspoon turmeric powder Salt to taste Fresh coriander leaves for garnishing Lemon juice (optional)
Dry roast the rolled oats in a pan until they turn slightly golden and aromatic. Transfer to a plate for later use.
In the same pan, heat oil or ghee over medium heat. Add mustard seeds and let them splutter.
Add cumin seeds and asafoetida. Stir for a few seconds until fragrant. Add chopped onions, green chilli, and ginger. Sauté until onions turn translucent.
Add chopped tomatoes and cook until they soften. Add mixed vegetables, turmeric powder, and salt. Mix well and cook for a few minutes.
Add the roasted oats to the pan and mix everything. Cook for 2-3 minutes. If the upma seems dry, you can sprinkle a little water or vegetable broth.
Garnish with fresh coriander leaves and a squeeze of lemon juice. Serve hot as a nutritious and filling breakfast or snack.
