Oats khichdi is a healthier version of the traditional rice-based khichdi. Filled with protein and fibre content, it is also easy to make. So, if you want a quick and healthy one-pot meal, here’s the recipe.
1 tablespoon ghee 1/2 teaspoon cumin seeds 1 medium onion 1 green chilli 1 inch ginger 1 tomato 1/2 cup moong dal 1 cup rolled oats 1/2 teaspoon turmeric powder 1/4 teaspoon red chilli powder Salt to taste 4 cups water Chopped coriander leaves for garnish
Heat some ghee in a pressure cooker. Saute cumin seeds, chopped onion and green chilli.
Add grated ginger and tomato. After a minute, add moong dal and all the spices.
Mix in the rolled oats. Stir well. Pour in the water and cook for 3 whistles.
Once done, let the pressure release naturally for 10 minutes.
Garnish with chopped coriander leaves and serve with dahi and achar.
