Healthy Lunch In A Snap With A Baked Feta Bowl

In the middle of the work day it can be hard to prioritise eating healthy. This delicious bowl is packed with veggies and protein to make eating better simple, no matter when you need it.

Ingredients

250 gm feta 200 gm canned chickpeas (drained) 100 gms cherry tomatoes (halved) 1 head broccoli (chopped) 4 cloves garlic (peeled) 1 tablespoon extra virgin olive oil ½ teaspoon dried oregano ¼ teaspoon red pepper flakes 4 tbsp honey

Step 1

Prep all your vegetables and preheat an oven to 180 C.

Step 2

Add the veggies to a deep baking tray drizzle with oil, add the oregano and pepper flakes and mix well.

Step 3 

Cut the feta into wide strips and place them in with the vegetables. Drizzle with a little more oil and the honey.

Step 4

Bake for 15-20 minutes until the feta is golden. Serve warm.
