Banana bread has seen a renaissance in the last few years, as this quick bread has been all over social media. The bread comes together quickly, uses pantry staples, and is loved by people of all ages. You can also make it healthier by incorporating some protein into it for a nutritious teatime snack for you and your kids.
2 mashed, ripe bananas 2 scoops whey protein powder (vanilla or banana flavour) 1 cup of oat flour 1/4 cup Greek yoghurt 2 eggs 1/4 cup honey or maple syrup 1 teaspoon baking powder 1/2 teaspoon baking soda Pinch of salt Optional: 1 teaspoon cinnamon
Preheat the oven to 350°F (175°C). Grease or line a loaf pan.
Mix bananas, whey protein, oat flour, Greek yoghurt, eggs, honey/maple syrup, baking powder, baking soda, salt, and cinnamon (if using).
Pour the batter into a loaf pan. Bake for 35–40 minutes until the toothpick comes out clean.
Cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.
Slice and enjoy your high-protein banana bread.
