Carrot is a juicy root vegetable that boasts a series of health benefits, including aiding weight loss, boosting immunity, and improving skin. Combine carrots with foods like celery, onion, and garlic to craft a creamy and an appetising soup dish. Here’s how.
5 cups chopped carrots 4 cups vegetable broth 2 cups water 2 chopped garlic cloves 1 stalk chopped celery 1 chopped onion 1 tablespoon butter 1 tablespoon extra-virgin olive oil 1 teaspoon chopped thyme or parsley ½ teaspoon salt Freshly ground pepper to taste
In a pan on medium heat, melt butter with oil. Once the butter has melted, add onion and celery; stir for about 6 minutes till the vegetables become tender.
Introduce garlic and parsley to the concoction, stirring the mixture for about 10 seconds. Add the chopped carrots plus water and vegetable broth.
Increase the heat and bring the concoction to a simmer. Subsequently, lower the heat and cook the concoction for about 25 minutes till the ingredients become soft.
Puree the concoction in a blender till it becomes completely smooth and velvety. Season the soup with salt and pepper, and transfer to serving bowls. Enjoy!
