Loaded with nutritious veggies, good fats and a spicy dressing to enliven the dish, this salad recipe involves minimal cooking and meal-prepping.

1 cup black rice, cooked ¼ cup green onions, chopped 1 tablespoon chopped basil 1 tablespoon chopped coriander 1 avocado, diced 1 cup roquette leaves ½ tablespoon chia seeds ¼ cup chopped almonds

Juice of 1 lemon 1 tablespoon soy sauce ½ teaspoon curry powder 2 teaspoons honey/maple syrup 1 teaspoon red chilli flakes 2 cloves garlic, minced 1 teaspoon grated ginger Salt, to taste

Combine all the ingredients for the salad dressing in a small bowl and set aside.

Mix together the rice, roquette leaves, chopped herbs, green onions and mix well.

Add the avocado, chia seeds and almonds, before drizzling the dressing all over.

Using a fork, combine everything well and refrigerate for 30 minutes before serving.
