Beetroots are healthy veggies that can help strengthen your immune system during monsoon season with this simple soup recipe. It is loaded with the goodness of beets and various spices. Here's a recipe for you to try:
2 beetroots (peeled, chopped) 1 carrot (peeled, chopped) 1 onion (chopped) 2 garlic cloves (minced) 1-inch ginger (grated) 4 cups vegetable broth 1 tbsp olive oil Salt and pepper to taste Fresh parsley/cilantro (garnish)
Sauté onion, garlic, and ginger in olive oil.
Add beetroots and carrot; cook for 5 minutes.
Add vegetable broth, boil, then simmer until veggies are tender.
Blend until smooth, season with salt and pepper, garnish.
