Beetroot poriyal is a healthy recipe that uses different ingredients in one wholesome bowl. The word "poriyal" means anything fried, or at times sauteed in Tamil. This is a popular meal in South Indian states and a must-try. Here's a recipe for you to try:
2 grated beetroots 1 tablespoon of oil 1 teaspoon of mustard seeds 1 teaspoon urad dal 1-2 dried red chillies A pinch of asafoetida Curry leaves Salt to taste Grated coconut (optional)
Heat oil, add mustard seeds, urad dal, red chillies, asafoetida, and curry leaves.
Add grated beetroot and salt, and cook covered for 10–15 minutes.
Remove the lid and stir-fry until tender and excess moisture evaporates.
Garnish with grated coconut. Serve it hot as a side dish.
