Who doesn't love pasta? This is a wholesome dish that is easy to prepare, fills you up, and tastes absolutely fantastic. This beetroot pasta is the perfect combination of flavour and health, making it an ideal dinner for weeknights. Here's a recipe for you to try:

Ingredients

225g whole wheat pasta 2 grated beetroots 2 minced cloves of garlic 1 tablespoon of olive oil 1/4 cup of vegetable broth or water Salt, pepper, and fresh basil (optional) Grated Parmesan cheese or nutritional yeast (optional)

Step 1

Once the pasta is cooked to al dente, drain.

Step 2

Add the grated beets and simmer until softened after sautéing the garlic in olive oil.

Step 3

After adding the vegetable broth, cook it, then add basil, salt, and pepper for seasoning.

Step 4

Toss cooked pasta into beetroot sauce and serve hot. Garnish with nutritional yeast or Parmesan cheese, if preferred.
