Curd rice is a popular South Indian dish that is cherished for its creamy texture, impeccable flavour and low calories. So, why not take it a notch higher with the addition of beetroot? The earthly flavour with a hint of sweetness from the beets adds a unique charm to the dish that you will enjoy. Here's a recipe for you to try:
1 cup of cooked rice 1 small beetroot, grated 1 cup plain curd 1 tablespoon of oil 1/2 teaspoon mustard seeds 1/2 teaspoon cumin seeds 1-2 green chillies, finely chopped (optional) A few curry leaves 1/4 teaspoon asafoetida (hing) Salt to taste Chopped coriander leaves for garnish
Heat oil in a pan. Add mustard seeds and cumin seeds. Let them splutter.
Add chopped green chillies, curry leaves, and asafoetida. Sauté for a few seconds.
Add grated beetroot to the pan. Cook until the beetroot is soft and cooked through.
In a mixing bowl, combine the cooked rice and the beetroot mixture. Add plain yoghurt (curd) to the rice mixture. Mix well until everything is evenly combined.
Season with salt according to your taste. Mix again.
Garnish with chopped coriander leaves. Your colourful and delicious beetroot curd rice is ready to serve.
