These cookies are comforting, crumbly and timeless. You will love these cookies thanks to their chewy texture and oats as a base. The raisins add a sweet and slightly tart flavour to the cookies which taste fabulous with the oatmeal. This recipe will help you get the best oatmeal raisin cookies that you will keep coming back to both the cookies and the recipe.

3 cups old-fashioned rolled oats 1 cup raisins 1 cup softened unsalted butter 1 1/2 cups all-purpose flour 1/4 cup granulated sugar 1/2 teaspoon salt 1 cup packed brown sugar 2 large eggs 1 teaspoon baking soda 1 1/2 teaspoons ground cinnamon 1 teaspoon vanilla extract 1/2 cup chopped walnuts (optional)

Preheat the oven to 350° Fahrenheit. Two baking sheets should be lined with parchment paper.

Sift together the flour, baking soda, salt, and cinnamon in a medium mixing bowl.

In a separate large mixing bowl, cream together the softened butter and both sugars. Continue beating for another 2-3 minutes, or until the mixture is light and fluffy. Beat in the eggs one at a time, followed by the vanilla extract.

Mix the dry ingredients into the wet components just until mixed. Stir in the oats, raisins, and walnuts (if using) gently.

Scoop 2 tablespoon mounds of dough onto prepared baking sheets, spacing them about 2 inches apart. Bake for 12-14 minutes, or until the rims are lightly browned but the centre is still soft.

Allow the cookies to cool for 5 minutes on the baking pan. After that, place them on a wire rack to cool entirely.
