Beetroot puree is a nutrient-rich addition to meals, adding a natural sweetness and deep colour. Packed with vitamins and antioxidants, it’s versatile for use in smoothies, soups, and desserts. Its earthy flavour elevates dishes while promoting health and visual appeal effortlessly.
2 medium-sized beetroots Water A pinch of salt Lemon juice
Wash and peel the beetroots. Cut them into small chunks for quicker cooking.
Place the beetroot chunks in a pot and cover with water. Bring to a boil and cook until they are tender. It should take about 20-30 minutes.
Drain the cooked beetroot chunks and let them cool slightly. Transfer to a blender or food processor and blend until smooth.
Add a little water if needed to achieve the desired consistency.
Add a pinch of salt or a few drops of lemon juice to enhance the flavour, if desired.
Use immediately or store in an airtight container in the refrigerator for up to 3 days.
