1 cup almond flour 1 cup ragi flour ½ cup jaggery powder ½ teaspoon baking soda ½ teaspoon ground cinnamon 2 tablespoons coconut oil 2 tablespoons maple syrup 1 egg 1 teaspoon vanilla extract

Preheat your oven to 180°C while you combine all the dry ingredients in a bowl.

Whisk the egg, maple syrup, vanilla extract and coconut oil together and transfer to the dry mixture.

Knead into a dough and rest for 30-35 minutes in the refrigerator, before rolling out the dough into ¼ inch-thick sheet.

Cut into shapes and arrange on a baking tray to bake for 10-15 minutes, until a deep brown colour.
