Banana bread is a moist, sweet quick bread made from ripe bananas. It's easy to prepare and hardly takes any time to bake. It’s a great way to use over ripe bananas and features other ingredients that are usually available at home, such as butter, sugar, eggs, and flour. Popular variations include adding nuts or chocolate chips.
2 to 3 ripe bananas 1/3 cup melted butter 3/4 cup sugar 1 egg 1 tsp vanilla extract 1 tsp baking soda Pinch of salt 1 1/2 cups all-purpose flour
Preheat the oven to 175°C and grease a 4x8 inch loaf pan.
In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir the melted butter into the mashed bananas.
Mix in the sugar, beaten egg, and vanilla extract until combined.
Sprinkle the baking soda and salt over the banana mixture and mix in. Add the flour last, stirring until just combined. Do not overmix.
Pour the batter into the prepared loaf pan. Bake for 60 to 65 minutes, or until a toothpick inserted into the centre comes out clean.
Remove from the oven and let cool in the pan for a few minutes, then transfer to a wire rack to cool completely before slicing.
