Egg fried rice is a quick and delicious dish that combines fluffy rice with scrambled eggs, sautéed vegetables, and flavourful soy sauce. Perfectly seasoned and easy to prepare, it’s a versatile meal enjoyed on its own or as a side to complement other dishes.
2 cups cooked rice (preferably a day old) 2 eggs 2 tbsp oil 1 small onion 1/2 cup mixed vegetables (carrots, peas, beans) 2 tbsp soy sauce 1 tsp vinegar Salt and pepper to taste Spring onions
Heat 1 tbsp oil in a large pan or wok. Beat the eggs, pour them into the pan, and scramble lightly. Remove and set aside.
In the same pan, add the remaining oil and sauté onions until soft. Add mixed vegetables and stir-fry until slightly tender.
Add the cooked rice, soy sauce, vinegar, salt, and pepper. Stir well to coat the rice evenly.
Add the scrambled eggs back into the pan and mix gently.
Garnish with chopped spring onions and serve hot.
