By Jasmine Kaur

If you’ve got last night’s dinner leftover in the fridge and there’s some aloo ki sabzi sitting in one corner, you should be happy because there’s so much to make with it.

Right from aloo ka paratha to cutlets and frankie, here are some delicious ways to use your leftover potato mix next time.

Aloo Sandwich

One of the easiest ways to finish off anything that’s leftover is to dunk it between two slices of bread and make a sandwich. That’s what you can do with aloo sabzi too.

Aloo Cutlet

A crispy, shallow-fried roundel, cutlets can be made with various ingredients and when you’ve got some potatoes at hand why not put them to some delicious use?

Aloo Frankie

Mumbai’s popular frankie roll that you’d often find on the streets can be made at home just by adding aloo sabzi to your flatbread and rolling it up.

Aloo Masala Poori

Instead of potatoes outside, why not dunk them in your favourite deep-fried Indian bread? Pack the poori with this sabzi and fry until golden-brown.

Bread Roll

Made with moist bread wrapped around a cylindrical potato mash mix, these are deep-fried until dark brown and crispy. Pair with tomato ketchup and enjoy.
