This special kheer made with sago pearls is a preparation that is offered while performing sacred rituals and can be consumed while fasting.

½ cup sago pearls 3.5 tablespoons sugar 1.5 cups milk 1 teaspoon cardamom powder 1 teaspoon ghee 2-3 teaspoons chopped cashews

Soak the sago pearls in water overnight and drain any excessive water.

Pour the milk into a saucepan and cook on a low heat until it is halved in volume.

Add the soaked sago pearls, sugar and cardamom powder and cook for 5-7 minutes.

Once it thickens, turn off the flame and let it cool, while you fry the cashews in ghee.

Add the toasted nuts to the cooling kheer and refrigerate for a couple of hours before serving.
