Why give only packaged sweets to kids during trick or treat? Make easy homemade vanilla lemon cupcakes to give kids something extra delicious and sweet.
1 cup all-purpose flour 1 teaspoon baking powder 1/4 teaspoon baking soda 1/4 teaspoon salt 1/2 cup unsalted butter 1 cup granulated sugar 2 large eggs 1/2 cup milk 1/4 cup lemon juice 1 teaspoon lemon zest
For the frosting: 1/4 cup unsalted butter 1 cup icing sugar 1 tablespoon lemon juice 1/4 teaspoon lemon zest
Whisk together flour, baking powder, baking soda, and salt. Then, whip the butter and sugar until light and fluffy.
Beat in eggs, milk, lemon juice, and lemon zest. Combine wet and dry ingredients.
Divide the batter evenly among the cupcake liners. Bake for 20-25 minutes.
Let cool, and use frosting.
For frosting, cream together butter, powdered sugar, lemon juice, and lemon zest. Serve.
