This buttery soft halwa made with jaggery, ghee and whole wheat flour, is flavoured with spice powders that are great to build immunity during the monsoon season, while also making you feel cosy.
1 cup whole wheat flour 1 cup jaggery ¾ cup ghee 2.5 cups water 4-5 strands saffron ¼ teaspoon cardamom powder ¼ teaspoon dry ginger powder ¼ teaspoon cinnamon powder ¼ teaspoon clove powder ¼ teaspoon nutmeg powder
Add the water and jaggery to a pan and let the jaggery melt completely into a syrup.
Add ghee to another kadhai and add the wheat flour.
Cook the flour for 7-8 minutes on a low flame, stirring constantly, until it is the colour of a dark caramel.
Add ½ a cup of the hot syrup into the browned flour, at a time and stir to mix it in.
Continue to do this until all the water has been absorbed and cook for another 6 minutes.
Once the mixture begins to leave the sides of the pan, add the spice powders and saffron.
Mix well to combine and serve warm, garnished with some chopped almonds.
