Gujarati Kadhi is a delicacy from the western Indian state of Gujarat. Typically served with steaming rice or khichdi, it is a sweet and sour yogurt-based curry that is spiced with a variety of herbs and spices.
1 cup plain yogurt 3 tbsp besan (gram flour) 2 cups water 1 tbsp ginger paste 1 tbsp garlic paste 1 tsp turmeric powder 1 tsp red chilli powder 1 tsp cumin seeds 1 tsp mustard seeds 2-3 dried red chillies 1 sprig of curry leaves 1 tbsp sugar Salt to taste 2 tbsp oil 1 tbsp chopped coriander leaves for garnishing
Take a bowl, whisk the yogurt and besan together until smooth. Now Add 2 cups of water and combine well.
Heat oil in a pan over medium heat and add cumin seeds, mustard seeds, dried red chillies, and curry leaves.
Add ginger paste and garlic paste and sauté for a minute. Add turmeric powder, red chilli powder, sugar, and salt. Mix well.
Now Add the yogurt mixture to the pan and stir continuously until it comes to a boil.
See the consistency and smoothness Garnish with chopped coriander leaves and serve hot!
