Khichdi is a simple one-pot dish that is light on the stomach but filled with fibre and nutrients. If you want to keep your dinner light, try this delicious Gujarati-style khichdi recipe that can be made within an hour.

Ingredients

1 cup moong dal 1 cup rice 3 tablespoons ghee or butter 1/4 teaspoon hing 1 tablespoon ginger 1/2 tablespoon garlic 1/2 teaspoon turmeric powder 2.5 cups water Salt to taste

Step 1

Rinse and soak the moong dal and rice together for a few hours.

Step 2

Heat some ghee and add turmeric powder, hing, salt, chopped ginger and garlic.

Step 3

Transfer the masala to a pressure cooker, add the soaked dal and rice, and cook on high pressure for about ten minutes.

After the whistle, turn off the heat and let the cooker release pressure before you open the lid.
