Made with sewai or semiya, this Gujarati sweet dish is perfect for those who are keeping a ritual vrat during the nine days of Navratri 2023. Here’s the recipe for you to try out.
1 cup vermicelli 3 tbsp ghee ½ cup milk ¼ cup sugar ¼ tsp cardamom powder 2 tbsp saffron milk Dry fruits, for garnish
Heat the ghee in a large wok, then add the vermicelli. Stir and roast until the vermicelli turns brown.

Now add the milk and saffron milk and mix well. Cook the vermicelli until it is almost done.

Add cardamom, sugar and mix well. The vermicelli should be dry and slightly sticky now.
Let the Sev Ni Biranj cook for another minute, then garnish with chopped nuts.
Mix again and serve the Sev Ni Biranj while still warm.
