Sev Mamra is a popular Gujarati snack known for its delightful crunch and flavourful spices. This quick and easy recipe combines puffed rice (mamra) with sev and a blend of spices, creating a light and savoury treat perfect for any time of the day.
4 cups puffed rice (mamra) 1 cup sev 2 tablespoons oil 1 teaspoon mustard seeds 1 teaspoon cumin seeds A pinch of asafoetida (hing) 10-12 curry leaves 1/4 teaspoon turmeric powder 1/2 teaspoon red chilli powder 1/2 teaspoon salt (adjust to taste) 2 tablespoons roasted peanuts (optional) 2 tablespoons roasted chana dal (optional)
In a large pan, heat the oil over medium heat. Add mustard seeds and let them splutter. Add cumin seeds and asafoetida. Sauté for a few seconds until fragrant.
Toss in the curry leaves and let them crisp up. Sprinkle turmeric powder and red chilli powder. Stir well to combine.
Add the puffed rice to the pan, stirring continuously to ensure even coating with the spice mixture.
Mix in the sev, roasted peanuts, and roasted chana dal. Stir for another 2-3 minutes until everything is well combined and heated through.
Remove from heat, let it cool, and store in an airtight container.
