Monsoon calls for a cup of tea served along with mirchi bhajiya. With each state hiding its secret recipe, it’s time to dive into the Gujarati guide. Here is how you can make besan-stuffed mirchi bhajiya in Gujju style at home.
6-8 green chillies 2 cups besan 2 tbsp rice flour 1 tsp sesame seeds 1 tsp cumin powder 1.5 tsp coriander powder ½ tsp turmeric powder 1 tsp red chilli powder A pinch of sugar Salt to taste 1 tbsp lemon juice Oil for frying
Wash and dry long and thick green chillies. Slit from the centre and deseed them.
In a bowl, mix a cup of gram flour, cumin powder, lemon juice, coriander powder, turmeric, red chilli powder, sesame seeds, sugar, and salt to taste.
Add some oil to this rather dry combination and start filling chillies with it.
In another bowl, combine besan, water, rice flour, salt to taste, a pinch of turmeric, and red chilli powder to prepare a thick batter.
Coat stuffed chillies with the besan and rice flour batter and drop them in hot oil.
Toss mirchi bhajiya in oil until they turn crispy and serve them with tangy-sweet tamarind chutney and green chutney.
