Make with grated lauki or bottle gourd, this Gujarati snack is not only healthy and delicious but also very easy to whip up. Just try out this recipe today and enjoy your healthy snacking time.
2 cups bottle gourd, grated 1 cup wheat flour 1/2 cup gram flour 2 green chillies, finely chopped ¼ tsp asafoetida ½ tsp turmeric powder ½ tsp red chilli powder ½ tsp cumin powder ½ tsp coriander powder ½ tsp fennel seeds ½ tsp cumin seeds ½ tsp ginger paste 1 tsp salt 2 tbsp coriander leaves, finely chopped

1 tbsp yoghurt 1 tbsp oil Water, as required For the tempering: 2 tbsp oil ½ tsp mustard seeds 1 tsp sesame seeds ¼ tsp asafoetida 2 sprigs curry leaves 1 tbsp coriander leaves, chopped

Place all the ingredients for the Muthiya dough in a large bowl and mix well to form a soft dough.

Divide the dough into equal parts and roll into cylindrical shape. Place in a steamer and cook for 15 minutes.

Remove the Muthiya from the steamer and let them cool down completely. Cut into bite-sized pieces.

Heat oil in a wok and add the mustard seeds, curry leaves, asafoetida and sesame seeds, and let them splutter.

Once they stop spluttering, add the Muthiya and stir-fry until every piece is coated and turns crispy.

Transfer the Dudhi Muthiya into a bowl, top with coriander leaves and enjoy.
