Gujarati Dhili Khichdi is a comforting and light meal, perfect for any day. This simple dish combines rice and moong dal, infused with aromatic spices for a wholesome and satisfying experience.
3/4th cup rice 1/4th cup skinned green gram 2-3 tbsp clarified butter 1 tsp cumin seeds 1 tsp mustard seeds 1/4th tsp asafoetida 7-10 whole black pepper 7-10 green chillies (adjust to taste) 2 dried red chillies 20-22 curry leaves Water (4 times the total quantity of dal and rice) Salt to taste Pinch of turmeric Coriander leaves for garnish
Wash and soak rice and moong dal together for 30 minutes. Heat ghee in a pot, add cumin, mustard seeds, hing, black pepper, and both types of chillies. Sauté for a few seconds.
Add curry leaves, soaked rice, and dal. Sauté for 2-3 minutes. Add turmeric, salt, and water. Bring to a boil, then simmer on low heat until the khichdi reaches a semi-liquid consistency.
Garnish with coriander leaves and serve hot with ghee on top.
