Gujarati dal dhokli is synonymous with healthy and satisfying indulgence. It is a one-pot Indian dish that you can enjoy in winter when you are not in the mood to cook an elaborate meal yet craving something soulful.
For Dal ½ tsp turmeric ½ cup toor dal Water as needed 1 tsp mustard, cumin 7-8 curry leaves Oil as needed 1 bay leaf ¼ tsp fenugreek, hing Salt to taste 1-inch cinnamon 1 tbsp ginger, tamarind pulp 2 tbsp lemon juice ¼ cup coriander leaves 1 tsp chilli powder, jaggery 1 green chilli
For Dhokli ½ cup wheat flour ½ tsp turmeric 1 tbsp besan 1 tbsp oil ½ tsp red chilli powder ½ tsp carom seeds Salt to taste Water as needed
Add wheat and besan flour into a bowl and sprinkle all the spices on top of it. Knead a soft dough and keep it aside.
Wash the lentils and cook them with three cups of water and turmeric powder. Pressure cook for 3-4 whistles.
Heat oil in a kadhai and roast whole spices. After a minute, add curry leaves, mustard seeds, cumin seeds, chillies, and ginger.
Add the spices to the kadhai and roast them until they release the oil. Add jaggery powder and pour the lentils.
Let the dal come to a boil while you shape the dough into kite-like structures. Fold in dhokli into the dal.
Once the ingredients are cooked, turn off the flame, add lemon juice, and sprinkle coriander leaves for garnish.
