Jharkhand is known for its variety of flora and fauna. There are many greens that are found in the deep forests and plains of Jharkhand that taste absolutely delicious. One can make different saag preparations from it or simply fry it for evening snacks. Get to know about these lesser known local greens. 

Arbi Leaves

Arbi leaves, aka. Elephant ears have a slightly bitter taste with a unique earthy flavour. You can make dishes like 'arbi ka saag', arbi fritters, and more.

Poi Saag

It is traditionally used in 'poi saag' curry, which is a staple in many eastern states. It can also be added to soups, stews. It is gooey like bhindi but with a more sweet taste.

Koinar Saag

A very unique Jharkhand favourite green that grows on trees. The abundance of young leaves is harvested and cooked with garlic during the monsoon. 

Chakod

It is often used in stir-fries, curries, and can be added to soups for a rich flavour. The green is tender with a slightly bitter undertone, which reduces upon cooking.

Khesari Saag

Khesari saag is often cooked into a thick, flavorful curry. It can also be used as a filling for parathas or as a side dish. A good alternative to methi with a mild taste.
