You may get all the health benefits of green mung beans by eating this delightful and wholesome dish. It's the perfect complement to your healthy meals because of the abundance of protein and flavorful spices it contains.
Soak 1 cup of green mung beans in water for 4-6 hours.
Heat 2 tablespoons of oil in a pan and add cumin seeds, mustard seeds, and curry leaves.
Add chopped onions, ginger, and garlic. Sauté until onions are translucent.
Stir in tomatoes, turmeric, cumin powder, coriander powder, and red chili powder.
Add the soaked mung beans and water. Pressure cook for three whistles of until beans are tender.
Garnish with coriander and serve hot with rice or roti. Enjoy your nutritious green mung bean curry!
