Green Goddess Chicken Salad Sandwich: A Quick Fix Lunch

This versatile and delicious chicken salad sandwich recipe can be modified in any way to accommodate any kind of greens you enjoy more than the others and makes for a filling but light lunch option.

INGREDIENTS

1 cup cooked chicken ¼ cup Greek yoghurt 2 tablespoons mayonnaise ¼ cup celery, chopped ¼ cup green onions, chopped 2 teaspoons garlic powder 2 tablespoons dill, chopped Juice of half a lemon 2 tablespoons pistachios Salt and pepper to taste

METHOD

Add the cooked chicken, yoghurt, mayonnaise and garlic powder to a large bowl.

METHOD

Using a hand mixer, combine the ingredients until the chicken is shredded finely.

METHOD

Tip in the chopped celery, dill, green onions and pistachios and mix thoroughly.

METHOD

Add the lemon juice and season with salt and pepper to taste.

METHOD

Use a spatula to slather the mix on any bread of your choice and add a leaf of lettuce or two.

METHOD

Use another slice to sandwich the filling and cut into two and enjoy at room temperature or cold.
