Greek Lemon Potatoes: Crispy, Zesty, And Full Of Flavour

Greek Lemon Potatoes are a tasty side dish packed with zesty, tangy flavours and a lovely aroma of garlic and herbs. Traditionally roasted, these potatoes are crispy on the outside and soft on the inside. Here is how you can make this Mediterranean classic at home.

Ingredients

4 large potatoes ¼ cup lemon juice ¼ cup olive oil 4 cloves garlic 1 tsp dried oregano ½ tsp black pepper 1 tsp salt ½ cup vegetable broth or water Fresh parsley

Step 1

Preheat the oven to 200°C, line a baking tray with parchment paper.

Step 2

In a large bowl, combine lemon juice, olive oil, garlic, oregano, salt and pepper. Whisk well.

Step 3

Add the potato wedges to the marinade and toss until each piece is coated.

Step 4

Place the potatoes in a single layer on the baking tray. Pour vegetable broth or water around the potatoes.

Step 5

Wait for 40-45 minutes, flip halfway. Golden brown and crispy. Sprinkle with parsley and serve hot.
