Kanji Rice is a simple and healthy South Indian dish where rice is cooked in lots of water to a porridge-like consistency. It is a soothing food, especially during summer or when you are recovering from an illness. Here is how to make it:
½ cup rice 4 cups water ½ tsp salt ¼ tsp cumin seeds 1 tsp ghee Fresh coriander leaves for garnish
Rinse the rice under running water until the water runs clear.
In a heavy-bottomed pot add the washed rice and 4 cups of water. Bring to a boil in medium flame.
Reduce the flame to low, cover with a lid and let it simmer for 20-25 minutes, stirring occasionally, until the rice is soft and broken.
Once the rice is porridge-like, add salt, cumin seeds and a teaspoon of ghee for extra flavour.
Garnish with fresh coriander leaves and serve hot with pickles or any side of your choice.
