Leftover rice is the best ingredient to work with when you have creative juices flowing through your brain. This short recipe will guide you on turning cooked rice into crispy cutlets to savour with a cup of hot tea or coffee.
⅓ cup chopped onions ¼ tsp red chilli & cumin powder 1 cup cooked rice ½ tsp garam masala ½ cup mashed potatoes 3 tbsp gram flour 1 chopped green chilli 2 tbsp coriander leaves A pinch of turmeric powder Salt to taste
Mix vegetables and rice in a bowl. Use your hands to combine the ingredients.
Add spices to the mix and mash everything together until you can make little balls.
Shape the dough-like mixture into patties or tikkis and keep them aside to settle.
Heat oil in a pan and place rice tikkis. Let the base cook until the edges turn brown.
Flip the patties over to cook the other side until it turns brown and crispy.
Serve rice cutlets with chutney and sauce of your choice.
