Ugly delicious but packed with flavour, this Greek twist on the usual grilled cheese sandwich, is packed with greens, cheeses inside a crunchy, toasty exterior.
1 leek, thinly sliced 3-4 garlic cloves, minced 1 small bunch baby spinach 100 grams feta cheese 100 grams mozzarella cheese ¼ cup cream cheese 1 teaspoon lemon zest 4 slices sourdough bread Olive oil and butter, for toasting
Heat some olive oil in a pan and add the sliced leeks and garlic to allow them to sweat lightly.
Continue to cook them while you add the spinach and sauté until the spinach is fully wilted, devoid of any excess moisture.
Drizzle a few ribbons of olive oil on your sourdough bread and start to toast them.
Transfer the spinach mixture into a bowl and crumble in the feta cheese.
Grate the mozzarella cheese and add to the spinach along with the cream cheese.
Mix everything well and spoon some of the filling on to one slice of the bread toasting in the pan.
Use the other slice to top up and cover the filling and toast on both sides for 4-5 minutes each.
Once browned, slice into halves and serve hot.
