Gondhoraj Ghol, The Summer Cooler From Bengal

Gondhoraj Ghol is a thin, curd-based drink ideal for warm weather. The signature element of this iconic beverage of Bengali kitchen is the scent of Gondhoraj lemons. Flavor-wise, it reminds one of the ubiquitous Kafir lime in Thai cooking. 'Ghol' is the eastern equivalent of 'Lassi' in Punjab, although the latter is thick, creamy, and wonderful, while 'Ghol' is extremely thin, like buttermilk.

Ingredients

2 cups of curd 1 tbsp sugar 1 cup water Juice of 1 Gondhoraj lime Zest of 1 Gondhoraj lime 1/4tsp black salt Ice cubes

Step 1

Gather all the ingredients, pour the curd, sugar, and salt into a blender and churn them well.

Step 2

Add water, gondhoraj lemon juice, and lime zest and churn water again. Pulse a couple of times.

Mix all the ingredients till the drink gets a smooth consistency. Add ice cubes and churn again.

Final Step 

Now, pour the ghol into a tumbler, sprinkle more Gondhoraj lime zest on top, and serve. Have it cold.
