A vibrant and flavourful dish from Goa’s lesser-explored Vegetarian fare, Tambdi Bhaji is a traditional Goan recipe made with red amaranth leaves, spices, and a touch of tanginess, offering a delightful culinary experience.
500 grams of red amaranth leaves (tambdi bhaji) 1 medium-sized onion, finely chopped 2-3 green chillies, slit 3-4 garlic cloves, minced 1 teaspoon mustard seeds 1 teaspoon cumin seeds 1/2 teaspoon turmeric powder Salt to taste 1 tablespoon oil
Heat oil in a pan and add mustard seeds and cumin seeds. Let them splutter.
Add onions, green chillies, and minced garlic. Sauté until onions turn translucent.
Add turmeric powder and salt. Mix well. Add chopped amaranth leaves and saute till they wilt.
Cover the pan and cook on low heat for 5-7 minutes, allowing the flavours to blend.
Cook uncovered for 2-3 more minutes and then serve hot.
