Ingredients

2 cups gluten-free all-purpose flour blend 1/2 cup granulated sugar 1 teaspoon baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 1/2 cup unsalted butter, melted and slightly cooled 2 large eggs 1 cup milk 1 teaspoon vanilla extract

Step 1

Preheat your oven to 190°C and line a muffin tin with paper liners. In a bowl, whisk together the gluten-free flour blend, sugar, baking powder, baking soda, salt,

Step 2

In another bowl, whisk together the melted butter, eggs, milk, and vanilla extract until well combined. Add the wet ingredients to the dry ingredients and gently mix.

Step 3

Divide the batter evenly among the muffin cups, filling each about 2/3 full. Bake in the preheated oven for 18-22 minutes.

Remove the muffins from the oven and let them cool in the tin for a few minutes before transferring them to a wire rack to cool and enjoy!
