1 inch chunk of fresh ginger sliced into pieces 1 cup water 1 cinnamon stick 1 inch piece of fresh turmeric Sprigs of fresh mint 1 thin round of fresh lemon/honey

Combine the sliced ginger and water in a saucepan. Boil over high heat.

Add cinnamon stick, turmeric and fresh mint. Bring the mixture to a simmer. Reduce the heat as necessary and let it maintain a gentle simmer for 5 minutes.

Remove the pot from the heat. Carefully pour the mixture through a mesh sieve into a cup.
