Packed with spices and the flavour of dark rum, this Jamaican Rum-Infused Chicken Roast is the easiest dinner dish you can prepare in the middle of the week. Pair it with a simple pulao for the ultimate weeknight dinner.
2 chicken Maryland cut (thigh and drumsticks) ½ cup dark rum ½ cup onions, diced 1 tsp ginger garlic paste 1 tbsp allspice 2 tsp dried thyme 2 tsp cayenne pepper 1 tsp black pepper powder Salt, to taste ½ tsp lime juice 1 tbsp butter
Place the rum, lime juice, onion, ginger garlic paste, allspice, thyme, cayenne, salt, butter and black pepper in a blender.
Wash, clean and pat dry the chicken pieces and place in an oven tray or roasting tray.
Pour the marinate over the chicken pieces and rub all over thoroughly and marinate for an hour.
Place the tray with marinated chicken in a preheated oven for 30-45 minutes at 200 degrees.
Alternatively, you can also grill the chicken in a pan over a stove until cooked to perfection.
Once the chicken is perfectly cooked and evenly browned, serve it hot with Jamaican rice or pulao.
