Get Cosy with a Bowl of Homemade Silky Egg Drop Soup

Egg Drop Soup is a comforting Chinese meal made by slowly pouring beaten eggs into a seasoned broth. This makes silky egg ribbons with a light flavour. People often make this quick and easy soup because it's warm and delicate.

Ingredients  

4 cups of water or stock 1 tbsp light soy sauce 2 green onions, thinly sliced 3 eggs, beaten 1 Sprig of Coriander just the leaves 1 tbsp fried garlic chips Salt and pepper to taste Optional: Cornstarch slurry (1 tbsp cornstarch mixed with 2 tbsp water) to thicken the soup 

Step 1

Heat water in a large pot till it is warm, meanwhile lightly beat the egg. 

Step 2

Pour the beaten eggs into the pot while carefully swirling the water in a circular motion. With only a little stirring, the eggs will quickly cook into smooth ribbons. 

Step 3

Add crushed coriander, fried garlic, green onions, soy sauce, and stir to combine. Add salt and pepper to the soup until it reaches your desired seasoning. Mix the egg ribbons lightly by stirring them in.  

Step 4

You can add the cornflour slurry now if you want a bit thicker soup. It will thicken somewhat when stirred into the cooking broth. 

Step 5

Add more green onions and a little chilli oil as garnish, if you like. Hot egg drop soup is ready to be enjoyed.
